Ingredients
8ozFettuccine PastaCooked al dente
2tbspOlive OilFor cooking chicken
1lbChicken BreastsBoneless and skinless

1cupHeavy CreamFor the sauce

Instructions
Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, following package instructions. Reserve 1 cup of pasta water, then drain the pasta and set aside.
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook in the skillet until browned and cooked through, about 6-8 minutes per side. Once done, remove the chicken from the pan and let it rest for 5 minutes before slicing.
In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Pour in the heavy cream and whisk until smooth. Simmer for 2-3 minutes.
Gradually whisk in the Parmesan cheese, stirring constantly until melted and the sauce is creamy. If the sauce becomes too thick, add the reserved pasta water a little at a time to reach your desired consistency.
Add the cooked pasta to the skillet with the sauce and toss to coat. Slice the chicken and serve it over the pasta. Garnish with chopped parsley and extra Parmesan cheese if desired.
Notes
Feel free to substitute the fettuccine with any pasta of your choice, such as penne or linguine.
If you want to lighten the dish, you can use half-and-half instead of heavy cream.
